Malted Loaf
Ingredients
Organic wheat flours
Organic malted wheat flakes
Organic malted barley
Water
Salt
Molasses sugar
This is a dark, rich and moist loaf with a softly chewy crumb adding texture and bite from whole malted wheat flakes and malted barley grains. Malting the grains releases the natural sugars in them, which adds a creamy, mildly bitter sweetness complimented by the small amount of molasses.
Malting is a process where whole grains are moistened so that they begin to sprout after which they are roasted – the longer the roast, the darker the resulting flour.
Molasses adds unrefined sweetness along with minerals and vitamins.
Some bread manufacturers add malted flour to white flour to give it the appearance of being a brown, ‘good-for-you’ loaf. I don’t attempt to deceive you! This loaf is part white, part wholemeal.
