Ingredients

Organic medium and dark rye flours
Organic wheat flour
Water
Organic caraway seeds
Salt
Molasses sugar

A soft, tasty but mild loaf with a scattering, but not overwhelming, addition of caraway seeds and a crumb that holds together well without being too dense or gummy. Great for deli-style sandwiches.

Rye flour adds an extra depth and tang to sourdough, speeding up the fermentation and giving great flavour.  Caraway seeds add a touch of zing and spice and are a great digestive calmer.

Molasses, unlike refined sugar, has positive health benefits.  Rich and very dark, it contains vital vitamins and minerals, such as iron, calcium, magnesium, vitamin B6, and selenium.
